The sorcery speed is the cost: you can't hold mana open reactively, and commanders like Errant, Street Artist exist to do this more flexibly on an evasive body.

Commander is where Doublecast actually has a home, slotting into spellslinger builds that want redundant copies of effects after Twincast and Reverberate. Outside Commander, the format competition kills it: Legacy and Vintage have Fork and Twincast at instant speed, Modern and Pioneer have Reverberate and other flexible options, so Doublecast's sorcery restriction is a real cost with no upside to offset it. At any table where copying a Jeska's Will or a massive X-spell wins the game on the spot, Doublecast earns its slot as the fourth or fifth copy of that effect.
