Torpid Moloch puts a 3/6 wall on the board for one red mana — the defensive stat line is real, but the downside is brutal: it can't block creatures with defender, which is the exact trade you're making when you run a defender yourself. A 3/6 that blanks against other walls is a narrow tool in an already narrow role.

In Commander, Torpid Moloch is a fringe inclusion in dedicated defender or high-power-toughness synergy decks — think Arcades, the Strategist, where the body draws a card and swings for 6. Outside of that shell, a one-mana 3/6 that can't block defenders is just a speed bump that trades poorly with real threats. In Pauper it's technically legal but sees no meaningful play; the format's aggressive decks attack with creatures that have actual abilities, and a wall without upside doesn't answer them.
